Abstract
The purpose of this study was to investigate the potential preservation benefits of combining clove ( Syzygium aromaticum ) extract with Tilapia ( Oreochromis niloticus ) fish gelatin. The study revealed the capability of gelatin to act as a binding agent and the clove extract to inhibit the microbial growth thus extending the shelf life of products. Gelatin was extracted using alkali treatment method. Presence of gelatin protein was confirmed through gelatinase test and biuret test. The estimation of protein in the gelatin was done using Lowry's method. The clove extract was extracted using soxhlet extraction and the compound present in them were identified using GC-MS analysis. The combined preservative effect of gelatin and clove against food borne pathogens, was studied using the agar well diffusion method.
